Saturday: Pancakes


Sesame Ginger Spelt Waffles (We didn’t have a waffle iron, so pancakes were made instead!) 
Adapted from Bob’s Red Mill 

1 1/2 cups wholegrain spelt flour
1/4 cup finely chopped crystallized ginger
3 tablespoons unhulled sesame seeds
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
2 large eggs
2 cups almond milk 
1/2 cup cooked brown rice 
3 tablespoons coconut oil
1 teaspoon vanilla extract

Mix dry ingredients, then wet ingredients. Combine. Pour into waffle iron or make pancakes in your skillet.

Since this recipe was originally meant for waffles, we found the batter a bit too thin for pancakes. To remedy this, we added a 1/4 cup rolled oats and another 1/2 cup brown rice. If you like thin pancakes (or you own a waffle iron) the batter will be fine the way it is.

We topped ours with coconut flakes, poppy seeds, raw honey, berries, nut butter and yogurt. A perfect Saturday morning treat.
