During all this dreary Northwest winter weather, I have become a big chai fan! Unfortunately, all store bought mixes or chai drinks you order at coffee shops are sweetened with tons of sugar, which makes it difficult for me to enjoy it as much as I would like.
So... I decided to make my own!
There are tons of chai recipes on the internet. After finding a simple looking recipe, I scaled the serving size down and omitted the brown sugar -- in favor of sweetening each cup individually with a bit of raw honey.
Going to have a little mug of chai now... wishing for summer soon!

2 inch piece of fresh ginger, cut into thing rounds
2 cinnamon sticks
2 teaspoons black peppercorns
10 whole cloves
6 cardamom pods
6 cups cold water
6 bags of black tea
2 cups coconut milk
Raw honey, to taste
Combine first 5 ingredients in medium saucepan. Using the back of a large spoon, lightly crush/bruise spices. Add 6 cups of water, bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently for 10 minutes. Remove from heat. Add tea bags and steep 5 minutes.
Discard tea bags. Add milk and honey to taste. Bring tea just to simmer over high heat, whisking until honey dissolves. Strain chai into teapot and serve hot.
