Homemade Granola + Sesame Cranberry Peanut Butter

How would you like to start your morning with some of this?!  I hope you all answer correctly.

If you did answer correctly...I'm thrilled!  Now stay with me.  I am here to help you make this happen in your kitchen.

Making granola might sound daunting at first.  But trust me on this one, it's not!  If I haven't convinced you yet, then here's some more inspiration.  Just imagine the sweet, cinnamon-y smell that will fill your house as it bakes (whoever happens to be in your house during this process will love you).  Or imagine how happy your taste buds will be to eat fresh, flavorful granola straight from the oven, instead of the same boring granola you buy every time at the store.

This beautiful looking jar is the star of the show today.

This is our newest flavor and has my taste buds dancing.  It's the perfect balance of sweet and savory.  We combine our freshly roasted peanuts with pieces of dried cranberries and then add roasted sesame seeds for an expected but wonderful combination.   If you haven't tried it yet, I apologize for taunting you...  

Currently we are only selling this flavor online but it will be in stores soon!  

If you don't happen to have this particular flavor in your possession, that is quite alright.  Any of our other flavors, even the almond butters, can be substituted in this recipe.

Ingredients:
Makes about 4 cups

2 cups old-fashioned rolled oats
1/3 cup of salted roasted peanuts, coarsely chopped
1/3 cup of roasted sunflower seeds
1/4 cup brown sugar
1/4 cup of honey or agave
1/2 cup of Wild Friends Sesame Cranberry PB (or any of our other flavors)
1/3 cup of coconut oil
1 tsp vanilla extract 
2/3 cup dried cranberries
1/2 tsp sea salt

Directions:

Preheat oven to 325ยบ F.  Line a large, rimmed baking sheet with parchment paper.

In a large bowl, combine oats, peanuts, sunflower seeds, salt and cinnamon.  In a small saucepan, combine sugar and honey.  Bring to a simmer over medium heat, stirring constantly so they don't burn!  Turn off heat and stir in peanut/ almond butter, oil and vanilla.  

Pour peanut/almond butter mixture over oat mixture and stir until coated.  Spread mixture in a single layer on prepared baking sheet.  Bake in preheated oven for 40 minutes, stirring twice, until golden brown.  Once it's finished baking, stir in dried cranberries. 

Let cool completely. 

Store in an airtight container for up to 2 weeks.
