Over the past few years, we have received countless suggestions from customers of the next flavor we should launch.
From spicy peanut butter, to pineapple peanut butter, jelly filled PB, caramel swirled PB...we've heard them all!
One of the flavor combinations that has been suggested to us countless time is BACON and peanut butter. Although this would be delicious, we are going to keep the bacon separate from our jars and combine these two yummy ingredients in the form of a waffle! Sound good?
If you are a bacon
Peanut Butter Bacon Waffles
Inspired by The Blond Buckeye
1 package bacon (about 10 slices)
2 eggs, separated
1 1/2 cups buttermilk
2 TBS melted butter, cooled
1 cup all-purpose flour
1.5 TBS yellow cornmeal
1 tsp brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
3/4 cup honey
1/2 cup Wild Friends Chocolate Coconut Peanut Butter
For the waffles-
Cook bacon according to package or to your taste (I like it burnt!) Let it cool, crumble into bite size pieces and set aside.
Beat egg yolks, buttermilk and butter in a large bowl until smooth. Set aside.
Combine flour, cornmeal, sugar, baking powder, baking soda, salt in a medium size bowl. Slowly add dry ingredient in with the wet ingredients and mix gently. Do not overmix--lumpy is okay!
Beat egg whites with a hand mixer or stand mixer until stiff peaks form. Add the egg whites and bacon pieces into the batter, gently stir until incorporated.
Preheat your waffle maker and follow the instructions. Pour the appropriate amount into the center of the waffle maker and cook until golden brown.
**Once the waffles are cooked, they can be stored in a warm oven until serving time.
Mix honey and peanut butter together in a microwavable bowl. Microwave for about 20-30 seconds and then stir. Keep doing this in 15 second increments until it has all melted. Whisk until smooth.
Pour glaze on top of waffles and top with extra bacon pieces.
